Ingredients
  1. 4-6 cups sweet potato peeled and cubed into bite size pieces
  2. 2 cups zucchini quarter and diced
  3. 2 medium onions diced
  4. 4 cloves garlic
  5. 1 bell pepper (red, orange or yellow) diced
  6. salt
  7. pepper
  8. paprika
  9. veggie herbal spice mix of your choice (optional)
  10. olive oil
Instructions
  1. Peel the sweet potatoes, then dice into bite size pieces. Dice the remaining vegetables and place into a 9x13 baking dish. Drizzle your veggie mix with olive oil, sprinkle with seasonings, salt and pepper then mix well. Place into a preheated oven and bake at 400 degrees for 1 hour or until the sweet potatoes are tender. Stir mixture a couple times during baking to aid in even cooking.
